As being someone who works in a family business, it’s always refreshing to see another strive and do great things! Starlight Distillery with the Huber’s is another great example and it is a distillery I hope to visit in the near future!
Nose: The first thing that came to mind was Apple Juice with honey. It carries baking spice, hints of oak and caramel with light honey in the background.
Palate: While I only caught hints on the nose, caramel came through right away on the palate. Notes of green apple, honey, and subtle grain throughout are nicely balanced.
Finish: I’ll have to say, I think the cinnamon red hot finish that comes out of nowhere is one of my favorite parts. Along with that fantastic hug, light honey, and hints of oak.
I would rate this a 8.5 out of 10 and consider this a buy. Don’t miss out!
This is dangerously crushable! I was impressed by how the honey doesn’t overpower the palate but instead enhances each layer. I picked this bottle up through Seelbach’s website, and with it being a limited release, I doubt it will be around for long. Cheers!🥃🥃

This bottle has eluded me for years even after trying to trade for it. I need to have this bottle because it’s so different and such a wild ride eve Read Morery time I have it. This blend of Canadian and American whiskey leaves me speechless every time I have it. I could fill an entire page of tasting notes. Brown sugar, dusty oak, cherry, vanilla, rye sweetness, maple syrup and so much more.
The ride starts off good but then almost falls off right away but then explodes at mid and back of the palate leaving me with a finish that leaves me almost dizzy. One of the best bottles I’ve ever had. Read Less
