Appearance - The pour has a beautiful light mahogany hue to it. After a quick swirl in the glen you see that it does coat well and quickly develops medium size legs that stream down the glen back to the pour. This pour looks amazing!
Nose - As you get your first experience you get a punch of ethanol and some spice, but this is quickly displaced with a delicious creamy caramel note. As you go back in and dig deeper you get some hints of molasses and a bready note, which comes across as a molasses cookie. Then some light raisin notes come in as well to round off the nose on this pour. Wow, this has my mouth watering in anticipation!
Palate - As you take that first small sip you are greeted with sweet honey, and a peanut note which remind me a little of peanut brittle. Oh wow! What a start! Then as you go back in for a second larger sip you get treated to a rich dark chocolate and some light cherry notes as well as a creaminess making my mind point straight to chocolate covered cherries! Ok, can this pour give you anything else, or is it done. One last sip to see! Yes, you get a strong cinnamon (stick) and baking spice note towards the end. This palate experience is wonderful!
Finish - As you sit and allow this pour to evolve and transition to the finish it’s a medium long finish that gives you some great finishing notes. You go from those cinnamon (stick) and baking spices to a fresh berry fruit and some of that sweet drying oak that tingles the tongue ever so gently. This pour finishes with the best of them and I am so glad I got to try it!
Overall - This pour really has a lot going on as it’s pretty complex yet still very soft on the palate. It’s mouth coating and soft at the same time as it doesn’t over power you, rather it rewards the patience of slow sipper looking for what the pour has to offer. The notes from the nose to the palate and then the finish are all very distinct and make this pour such a unique sipper. You can definitely tell it’s a wheater as it has that distinct wheat note that mixes well but finds a place in the background and doesn’t try to steal the show like it sometimes can. Overall, I am impressed and satisfied with this entire sipping experience.
Score #/10 - As I sit and finish off this pour, I am not going to waste any time giving this an easy 8.8/10 as it is one of the best pours I’ve had this year and definitely the best wheated whiskey I’ve had this year! Bold statement, I stand by it firmly. I dare another wheated whiskey to try to take the top spot away from Star Hill Farm, I’m not sure it’s Read Less
